If it were my house I would keep plaster and replace plaster with lath on plaster in areas needed replacement.

Going from lath on plaster to drywall is like trading in a Rolls Phantom for a Geo Metro.
This is how I feel. Our house is so quiet now. I fear we will lose a lot of that.

One wall will be opened in new kitchen and 2 of the other 4 will have cabinets/tile/appliances on them. Wallpaper will be on the walls in the new dining room. Any imperfections from patching will likely be hidden behind all of that.
